More about Vegan Chef, Anna Shon:

Eating a plant-based diet is the nation's fastest-growing food trend, and for good reason. The more plant-based meals we eat the more benefits we feel and bestow. Whenever someone asked me why am vegan, I reply “ for my health, my pocketbook, the animals, the environment.... And for you” It has been said that if the World went vegan, we would almost immediately end world hunger. 1 acre of land can produce either 20,000 pounds of potatoes or measly 165 pounds of meat. A vegan diet is the most eco-friendly and sustainable way we can eat. The lives and deaths of farm animals are often brutal both physically and psychologically. A vegan diet has zero dietary cholesterol and a low-fat vegan diet also tends to be low in calories but high in fiber.

Three years ago my husband and I decided we would give whole foods plant-based lifestyle a shot. We immediately felt so much better with our health as well as our energy levels. Shortly after we became vegan our oldest daughters decided to join us. They started experiencing the benefits as well. Lastly our son declared he was going to be vegan as well. There has been challenges socially mostly for our children however I am confident that the benefits outweigh the challenges and our family will continue to live this way and help educate others who choose to come along for the ride.

I run a successful meal prep business in Boca Raton as well as an instagram page where I share daily recipes @plantbasedmom
